About the coffee:

Only fully ripe, red cherries are hand-picked. Upon arrival at the station, a Cherry Clerk inspects them first visually, then by flotation, ensuring only dense, top-quality cherries are accepted. These are then spread in thin layers on raised beds and turned regularly for even drying over 10 to 14 days.

Roaster's notes:

This might be the first Kenyan coffee we've ever offered. We've had a lot before, but nothing really stood out as much as this one. Or maybe... I just really want to offer a Kenyan lot.

On the cupping table, this lot stood out for its brightness and vibrancy—qualities it retained over time, even as the other Kenyan lots began to fade.

Water temp:

93C+

Brew recipe:

0. 18g grounds
1. 60mL bloom (for 40 seconds)
2. 60mL second bloom (for 40 seconds) -- use small spoon to stir as brew sits
3. 180mL pour (to 300mL) -- apply light swirls if grounds are sticking to brewer sides

You should be at around 3 minutes drawdown. Don't go too fine. You'll start muddying the acidity.
