About the coffee:

The cherries were hand selected and batched with a ratio of 70% just ripe, 20% overripe, and 10% half-ripe. The cherries were then floated to identify the densest cherries.

The cherries were then placed in a tank for 12 hours of aerobic fermentation. Afterwards, the cherries were depulped and placed back into the tank for another 24 hours with water.

Lastly, the coffee was spread on sunbed dryers for two weeks until it reached 11% moisture content. Then the coffee was placed in Grain Pro bags for two weeks before it was milled and exported.

About the farmer:

Norbey, his wife, and their two children run La Esmeralda, a 12-hectare farm in Acevedo, Huila, with 5 hectares dedicated to coffee. Norbey pushes the boundaries by exploring new fermentation challenges, resulting in complex coffees with fruity notes and intense aromas. 

Roaster's notes:

From the cupping table, we got bright lemonade acidity. This one is a lot of fun if you like bright, acidic coffees.

Brewing Notes:

Go with a V60. Grind fine, and push for extraction. This one is high acidity. I found that grind size has been a good lever to toggle if we want to control intensity of the acidity. Grind coarser for less acidity, and higher for more acidity.

Water temp:

95C+

Brew recipe:

0. 18g grounds
1. 6
0mL bloom (for 40 seconds)
2. 60mL second bloom (for 40 seconds) -- use small spoon to stir as brew sits

3. 180mL pour (to 300mL) -- apply light swirls if grounds are sticking to brewer sides

You should be at around 3-4 minutes drawdown. If you are hitting it quicker, try going finer.

Rest notes: As for rest, I found you were able to express the target profile a few days post-roast. If you want something more rich and expressive, let it rest for 2 weeks+.
