About the coffee:
In February 2017, Ledesma visited Diego Bermudez and he gave Ledesma 4 small Sudan Rume tree seeds Bermudez brought from a trip to Finca Pirineos. (winner of several cup of excellence competitions).
This coffee underwent anaerobic fermentation in tanks with a degassing valve for 60 hours. Then the cherries were solar dried for 36 hours, and went to a mechanical dryer until the ideal humidity. Finally, the coffee was left in Grainpro bags until stabilized.

I first heard about Finca Bet-El from Anton over at Regalia. He knows his stuff, so when he talked high about Finca Bet-El, I knew I had to reach out to try and build a relationship with them.
This coffee was bright, tropical, with light jammyness. I got very juice-heavy vibes from this one. Big fan.
Brewing Notes:
Go with a V60.
If you need to brew immediately, go with a Hario Switch recipe that includes a form of immersion. If you can wait, I'd suggest brewing with a V60.
Water temp:
95C+
Brew recipe:
0. 18g grounds
1. 60mL bloom (for 40 seconds)
2. 60mL second bloom (for 40 seconds) -- use small spoon to stir as brew sits
3. 180mL pour (to 300mL) -- apply light swirls if grounds are sticking to brewer sides
You should be at around 3-4 minutes drawdown. If you are hitting it quicker, try going finer.
Rest time: Let it rest for at 3 weeks+. We will be going light with this one. If you want to drink this early, I'd suggest going with a switch. But as the coffee rests, I'd suggest moving to a V60 as the tropical notes will become muted with immersion.
