About the coffee:

This Castillo and Colombia lot underwent an extended fermentation inside sealed tanks with addition of coffee cherry juice from prior batches.

About the farmer:

Álvaro Andrés Cardona Molina is a member of the Young Producer Program, which highlights those who have chosen passion over other options in life. Andrés has been working with coffee since he was 12 years old. Currently, he manages his uncle’s farm, Villa Lucía, where he cultivates coffee varieties such as Colombia, Castillo, and Cenicafe.

For those who don't know, the average age of coffee farmers in Colombia is 63. Lucia Solis talked about this on her podcast that younger generations aren't choosing coffee farming given that it can be a tough and risky lifestyle compared to other industries (IT, etc.). So it's a doubley-plus that we are supporting a younger farmer to continue to work in coffee, as without coffee farmers, there would be no coffee roasters.

Roaster's notes:

A very drinkable cup. When I cupped this, I found the resulting profile as lightly sweet, medium amount of dry fruit, and mild funk.

Brewing Notes:

WIP -- but leaning towards a V60 with a bloom + single pour to highlight the acidity with this coffee.

Your coffee will be roasted within one week of your order.
Currently, our guaranteed roasting days are Friday/Saturday nights. I try to roast based on order to guarantee you fresh coffee.
