About the coffee:

This microlot from Autumn Amber Estate is a low-temperature natural process. Only fully ripe red cherries were carefully selected and fermented indoors for 18 days under controlled low temperatures to maintain clarity and aromatic precision. After fermentation, the cherries were gently dried in a mechanical dryer for approximately two weeks until reaching stable moisture content.

Roaster's notes:

This was our favorite of around 16 Chinese coffees we received last year. What intrigued me about this was how it expressed balance while still primarily focusing on terroir.

Usually with Chinese coffees, you get very strong funk, or really heavy wood and earth tones. This coffee seems to tame both edges, resulting in something very drinkable.

Brewing Notes:

Brew recipe:

0. 18g grounds a tad coarser
1. 6
0mL bloom (for 40 seconds)
2. 60mL second bloom (until water drains)
3. pour to 300mL -- apply light swirls if grounds are sticking to brewer sides

This one is interesting since when dialing in, the levers for complexity and balance were super clear. Our fast (and light) roast expressed this really unique purple hued funk.

But then our slower roast tamed down the phenol notes that was very sweet and pleasant, but lacked the peak of the short roast.

We ended up doing two roasts and blending (by accident -- lol). One that was longer (by 20 seconds - 11.3% WL) and another that was shorter (10.72% WL).

If you find the brew too sharp, consider rounding it out with an immersion step.

I'd rest it 4 weeks+.
