About the farmer:

Bare is a kebele in Bona Zuria, Sidama, Ethiopia. Smallholders around the site farm at 2,100–2,200 masl on loamy clay, planted in JARC selections 74158, 74165, 74112, 74110 and 74140.

The site sits at 2,150 masl and is owned by the Tulu family. Aron Fesaha, the importer's Ethiopian coordinator, runs processing here and at Demeka Becha, twenty minutes away. 

About the coffee:

Cherries were hand sorted for color, floated for density, then hand sorted again before pulping. The parchment was pulped white honey and fermented in the remaining mucilage.

It was then moved to shaded raised beds and dried under filtered sun with steady airflow.

Roaster's notes:

I don't see too many White Honey processed coffees coming out of Ethiopia, so when this one came by the sampling table, I was super excited.

We get very delicate notes with this one. It's big on florals and not too forward with the fruit. In my sample notes, I mentioned "vibes of panama with the tea-like textures of an eth".

Brew recipe:

0. 18g grounds a tad coarser
1. 6
0mL bloom (for 40 seconds)
2. 60mL second bloom (until water drains)
3. pour to 300mL -- apply light swirls if grounds are sticking to brewer sides


Rest notes:

I'd leave it alone for 3+ weeks if possible.
