About the coffee:

Fully ripe cherries were depulped using a Penagos eco-pulper, then soaked in water for 12 hours before being transferred to drying tables.

Very minimal processing.

About the coffee:

Only fully ripe, red cherries are hand-picked. On arrival at the station, a Cherry Clerk inspects the fruit—first by eye, then by flotation—accepting solely dense, first-quality cherries. These are spread thinly on raised beds where they are turned frequently to secure even drying, a process that lasts roughly 10–14 days.

About the coffee:

This Los Nogales Tabi undergoes an innovative multi-step process. Ripe cherries experience a quick thermal shock, alternating between hot and cold water to pasteurize and draw out sugars for enhanced fermentation. After pulping, the coffee ferments for 72–90 hours with selected yeasts, building layered and distinctive flavors. It’s then sun-dried for 15 days, turned regularly for even moisture, and finally rested in repurposed beer barrels, adding a subtle aromatic depth and complexity.
