About the coffee:

This natural-process coffee starts with careful selection: only the ripest cherries are picked, then fermented in open tanks for 60 hours. From there it moves to drying, where the temperature is carefully controlled over about 20 days. The cup is spicy and vibrant, with notes of red fruit and florals, a creamy, balanced body, and a sweet, lingering finish.

Roaster's notes:

A juicy coffee. Big red fruit notes with some toned down tartness in the finish.

This has some slight complexities I typically associate with Panama woven in the cup. Big fan of this one.

 

Brewing Notes:

V60

Water temp:

90-93C

Brew recipe:

0. 18g grounds a tad coarser
1. 60mL bloom (for 40 seconds)
2. 60mL second bloom (until water drains)
3. pour to 300mL -- apply light swirls if grounds are sticking to brewer sides

 

Rest notes:

I'd leave it alone for 3+ weeks if possible.
