    About the farmer:

    Emerson Felipe Narváez is a 33-year-old, second-generation coffee producer from Cumbitara, Nariño.

    His farm, Finca El Turpial, sits at 2,200 meters above sea level and spans 30 hectares, with one hectare dedicated entirely to SL-28.

    About the coffee:

    Picked as fully ripe cherries and floated to remove defects, this lot underwent a two-stage fermentation: 48 hours dry anaerobic in-cherry in sealed barrels, followed by 96 hours of fermentation after pulping.

    It's noted that at above 2,000 masl, the cooler temperatures slow microbial activity and result in a brighter and fruitier coffee.

    Roaster's notes:

    This one is a fun terroir expression as it is a bit wild in flavor. It's moreso pretty multi-dimensional in that it expresses hints of spice, tea-notes, and wild fruit. It kinda has... a little bit of everything.

    And in the processing description, the importer notes how it tastes like a blend of Colombian & Kenyan coffee -- which kinda... makes sense. The Kenyan punchiness and bright fruit comes out, but then the other parts of the cup express more Colombian qualities.

    This is a good pick if you want something terroir-driven and unique.

    90-93C

    Brew recipe:

    0. 18g grounds a tad coarser
    1. 6    0mL bloom (for 40 seconds)
    2. 60mL second bloom (until water drains)
    3. pour to 300mL -- apply light swirls if grounds are sticking to brewer sides

     

    Rest notes:

    I'd leave it alone for 3+ weeks if possible.
