About the farmer:

Jorge Rojas was born in 1988 in Planadas, Tolima. He was twelve when his father died, and he began working the family farm alongside his mother. He left school after third grade and has worked in coffee since.

Rojas joined ASOPEP Planadas early on, drawn by the association's focus on quality. He has farmed using ecological methods from the start, and holds organic certification through ASOPEP alongside roughly 300 other member farms.

About the coffee:


After each harvest day, the cherries get floated first — clearing out the unripe and undernourished ones along with any leaves and sticks, so only sound fruit moves forward. From there they go straight into blue barrels, lids on, for a 12-hour fermentation in whole cherry. The coffee is then pulped and ferments a further 24 hours in mucilage before a full wash. That two-stage approach — cherry first, then mucilage — is what builds the fruit and body while keeping the cup clean.


Roaster's notes:

I believe this is our first Chiroso. A very balanced washed coffee where it has very bright characteristics with little to no hints of funk.

Easy pick for a daily driver.

Water temp:

90-93C

Brew recipe:

0. 18g grounds a tad coarser
1. 6
0mL bloom (for 40 seconds)
2. 60mL second bloom (until water drains)
3. pour to 300mL -- apply light swirls if grounds are sticking to brewer sides


Rest notes:

I'd leave it alone for 3+ weeks if possible.
