About the coffee:

below is high-level paraphrasing on my part by what information was given to me

The cherries were harvested, cleaned with ozonated water, and then put under ultraviolet light to reduce microbial load. Then the coffee was subject to an ultrasound process to open up the coffee.

The cherries were then anaerobically fermented with yeast in a pressure-controlled environment for 52 hours. The coffees are then washed and undergo controlled drying.

Roaster's notes:

We stumbled upon this lot in September (?) when we were looking to bolster our processed offerings. We reached out to Juan and he organized a set of lots for us to choose from.

Juan nailed the selection. From floral processing to other wild processing types, the cup labeled "KWC4" (we numerate to blind cup) was our favorite.

We got bursts of grape candy/grape soda with a sweet buttery finish. Usually with some processed grape, we either get sharp grape or over-the-top "artifical" grape, but this was a "pleasant" artificial grape.
