About the coffee:

The coffee is manually harvested and carefully selected for ripe cherries, then fermented in plastic containers for 20 hours. After that, it’s depulped and undergoes a second fermentation for an additional 60 hours.

Lastly, the coffee was dried on African beds for 20 days with a target final moisture level of 10%

About the farmer:

Alexander Vargas began dedicating himself to specialty coffee, building on the foundation of his family’s long-standing coffee-growing tradition. Over the past two decades at his farm, La Piragua, he has continually honed his craft.

Alexander operates an on-site coffee lab, where he explores innovative processing techniques. He works primarily with varieties like Geisha and Pink Bourbon, driven by a clear goal: to consistently produce exceptional coffee in an increasingly competitive landscape.

Roaster's notes:

Citrus, some spice, some florals, a little bit of everthing to be honest.

Brewing Notes:

Go with a V60. I don't think you need to push hard with this one. 

Water temp:

95C+

Brew recipe:

0. 18g grounds
1. 6
0mL bloom (for 40 seconds)
2. 60mL second bloom (for 40 seconds) -- use small spoon to stir as brew sits

3. 180mL pour (to 300mL) -- apply light swirls if grounds are sticking to brewer sides

You should be at around 3-4 minutes drawdown. If you are hitting it quicker, try going finer.

Rest notes: As for rest, I found you were able to express the target profile a few days post-roast. If you want something more rich and expressive, let it rest for 2 weeks+.
