About the coffee:

Coffee was pulped and fermented for 70 hours in an anaerobic environment. Culture was added added along with mosto during the fermentation step. The coffee was finally dried over 20 days.

Roaster's notes:

This coffee reminds me of fruit punch. Very heavy on the red fruit aromatics while expressing subtle acidity.

This coffee stood out to me because you don’t see many processed gesha lots, but also just how forward the aromas are. If you are looking for a fun, sweet coffee, this is a good for you.

This will be the third coffee we’ve sourced from Mario Gomez, and definitely not our last.

Brewing Notes:

V60

Water temp:

93C+

Brew recipe:

0. 18g grounds a tad coarser
1. 60mL bloom (for 40 seconds)
2. 60mL second bloom (until water drains)
3. pour to 300mL -- apply light swirls if grounds are sticking to brewer sides

A very easy processed gesha. Take the bag and squeeze the air out and you should get an idea of the aromatics. It tastes like how it smells -- heavy tropical, red notes.

If you want more depth, I'd suggest adding an immersion step. You'll get more body and sweetness, but might lose on the contrast of the "gesha-like" qualities and tropical top notes.

Rest notes:

I think you'll get something drinkable after one week. But I'd save some to consume after 4 weeks. It's a gesha, so some florality and nuance gets more pronounced over time, and how that plays with the process is pretty interesting.
