About the coffee:
This SL28 was cultivated from seeds given by Alejo's friends in Kenya, and it's now thriving in Costa Rican soil.
This SL28 lot underwent 5 days of fermentation in tanks at a temperature of 22C until the beans reached a final brix level of 14. Then the coffee was dried on a patio for 5 days and then refined in mechanical dryers for approximately 10 hours until they achieved a moisture content of 11.6%.
About the farmer:
Alejo is renowned for his experimental approach to coffee processing. Initially, his Volcan Azul farm exclusively produced washed coffees. However, in 2013, he began exploring the honey process, followed by naturals in 2014.
Terroir maintenance is crucial for Alejo. He adjusts his approach based on whether the land is flat or sloped, noting that each lot has unique characteristics while sharing the same sandy, volcanic soil.

Brewing Notes:
Go with a V60. This coffee is a mix of a lot of different profiles. It has some fruit, some florality, spice, and some chocolate nuttiness to it.
I was pretty happy with my V60 brew as it provided a good balance of prior listed profiles. I found that going with a switch, the fruit aspects got quite muted.
Water temp:
95C+
Brew recipe:
0. 18g grounds
1. 60mL bloom (for 40 seconds)
2. 120mL pour (to 180mL) -- apply light swirls if grounds are sticking to brewer sides
3. 120mL pour (to 300mL) -- apply light swirls if grounds are sticking to brewer sides
You should be at around 3-4 minutes drawdown. If you are hitting it quicker, try going finer.
Rest time: Let it rest for at least a week. You can open the bag to check the beans, but zip it back up and let it continue resting.
