About the coffee:

Don't have much info on this one currently. This is a carbonic maceration honey process and is a good example of innovation (and delicious coffee) coming from Yemen.

Roaster's notes:

Very different than what we usually offer. If you are looking for something that's closer to conventional third-wave coffee trends, I'd suggest skipping this one.

If you are looking to try something different, then I'd give this a consider. I'd say it has little to no acidity, but has an addicting sweetness to it.

This one was tricky to roast. The bean takes on color super easily, and comes out looking really dark even though we roast to minimal weight loss (9%). 

This one is a sipper. When hot, we get more of black tea, but once cooled, the sweetness tends to shine.

Brewing Notes:

V60.

Water temp:

93C+

Brew recipe:

0. 18g grounds
1. 60mL bloom (for 40 seconds)
2. 60mL second bloom (for 40 seconds) -- use small spoon to stir as brew sits
3. 180mL pour (to 300mL) -- apply light swirls if grounds are sticking to brewer sides

You should be at around 3-4 minutes drawdown. If you are hitting it quicker, try going finer.

Rest notes: 3-4 weeks+.
