About the coffee:

The ripe cherries were selected by hand, then floated and separated by density. Any less dense cherries were removed.

The cherries were then placed in a hopper and fermented for 12 hours. After fermentation, the cherries were dried, depulped, and kept in the fermentation tank for 24 hours.

The coffee was washed and spread in African sunbed dryers for 10-15 days at which point the coffee was brought to a moisture level between 10.5% and 11.5%.

About the farmer:

César Llantén didn’t grow up on a coffee farm, but that changed when he met his wife, Margarita, from a coffee-growing family in Huila. Inspired, he now dedicates 90% of his farm, La Florida, to Pink Bourbon.

Roaster's notes:

This pink bourbon is different than what we've served in the past (Frank Torres / Norbey Quimbayo) in that it's not high in acidity.

This lot is more toned down and balanced, with tones more of light florality with heavy black tea qualities. It has a creamy, milky body, and cupped like milk tea on the cupping table.
