About the coffee:

The coffee beans were selectively harvested and floated for separation. The selected beans were fermented for 90 hours in sealed barrels, and then dried on a covered patio for 15-25 days.

About the farmer:

Linarco Rodríguez Ospina is a third-generation coffee producer who inherited his family's land. He specializes in growing specialty coffees and experiments with different processing methods—including natural anaerobic, honey, and washed processes—to create complex, competitive cup profiles for the specialty coffee market.

Roaster's notes:

A cozy coffee that has a profile rooted in spices with a light accent in white florals. If you like our past La Piragua Washed Gesha or our Finca Campos Hermoso Black Honey Sidra, then I think you'll like this one too.

Brewing Notes:

Go with a V60. I don't think you need to push hard with this one.

Water temp:

95C+

Brew recipe:

0. 18g grounds
1. 60mL bloom (for 40 seconds)
2. 60mL second bloom (for 40 seconds) -- use small spoon to stir as brew sits
3. 180mL pour (to 300mL) -- apply light swirls if grounds are sticking to brewer sides

You should be at around 3 to 3:30 minutes drawdown. If you are hitting it quicker, try going finer.
